Jam Doughnut Muffins


I knew I was feeling better yesterday when I started day dreaming about cake. In fact, while walking Bella home from school, I was crossing the road and suddenly wondered why one car had braked and stopped and another was honking their horn furiously at me. Bella's coat has fallen off the pushchair and was lying in the middle of a busy junction and I'm afraid to say I was totally oblivious. After a brief "do I leave the pushchair on the pavement or push Angus out into the road again" inner debate, I retrieved the coat, sheepishly waved my thanks at the patient drivers and continued home. 

I blame cake for the whole thing. I was mentally running through the contents of the fridge and my cookery books as we walked, wondering what I could quickly make when we got home. The result was some dreamy Jam Doughnut Muffins from Nigella's How to be a Domestic Goddess. There are lots of different recipes out there on the web, if you google Jam Doughnut muffins the world of cakes rolled in melted butter and sugar will open up to you!




Eat them while they're warm. I can't begin to describe how good they taste, the crunch of the sugar, the fluffy vanilla flavoured muffin, the warm jam inside...they are amazing.


Here is a better photo of one of the more "damaged" ones to show off the full greasy, sugary, joyful heart attack heaven that is these muffins.


Total food porn. I ate the two broken ones, standing up in the kitchen so that the kids didn't see   (I'm not mean - they got to eat one, but only after they'd eaten up their pasta) and felt very happy.
