Lemon Curd


I don't feel that I've had many crafty makes or "ta-da" moments to share with you lately. But I have been creative in the kitchen and the garden over these last few weeks, enjoying things like flowers and jam and cake. And lemon curd.


I avoided making lemon curd until now because I always thought it was really difficult; in my mind it was up there with souffles, pastry, macarons and hollandaise sauce. But it's really easy! Shhh, don't tell anyone.

You need:

4 lemons
100 g/3.5 oz butter, cubed
200 g/7 oz caster sugar
3 eggs plus one extra yolk


  • Sterilise your jars.
  • Zest and juice the lemons. And while we are on the subject, the smell of a freshly zested lemon is pure heaven, it's up there with newborn babies' heads.
  • Bring a pan of water to a steady simmer.
  • In a bowl, put the lemon zest and juice, sugar and butter and put this bowl over your pan of water (1).
  • Whisk now and then until the butter has melted (2).
  • Lightly beat together the three eggs and one yolk and add to the mixture in the bowl.
  • Cook for about ten to twelve minutes, stirring regularly but not continuously with your whisk, until it looks and feels like custard and coats the back of a spoon (3).
  • Remove from the heat and leave to cool until it's luke warm, giving it a little stir every couple of minutes. 
  • Pour into your jars. You should get enough to fill two normal sized jam jars from this amount.


It's so lemony! Much, much sharper than shop bought lemon curd. I love it, as I do anything citrus, but John felt it was "a bit too sharp" and requested orange curd next time. Would I use four oranges to replace four lemons I wonder? I have also been reliably informed that gooseberry curd is excellent. Any other variations I could try?

Edited to add: The lemon curd needs to be stored in the fridge and eaten with two weeks.

  1. I LOVE lemon curd and absolutely need to attempt this recipe. I made strawberry jam for the first time last week and now am under the belief that I am capable of anything!

    the best lemon curd I've ever tasted was from the farm shop at tebay. I would eat it straight off my finger out of the jar.

  3. My nan used to make lemon curd. I swear if there is a jar to hand I can polish it off over a weekend. I love it that much! I have never made it myself though. I am in the middle of sterlising jars to make some preserved lemons and some feijoa jam. I may have to try my hand at lemon curd now. Love your lemon coloured material, perfect! xo

  5. and suddenly the mystery of lemon butter/curd (hemisphere dependent) is unveiled...i had no idea either, and had the similar trepidation you had (i.e. souffle fear). YUM> our neighbour keeps offering us bush lemons (i.e. with a million blemishes) so maybe I should have a crack at it!

  6. Oh, but I do love a good lemon curd. Just the right balance of bright lemon, tart taste, sugar and smooth butter. My only problem is I wind up eating what was supposed to fill the cake, tart or cookies - so I always have to make double the amount.

  8. Alternative recipes of lemon curd allow you to use butter, margarine and egg whites also. Lemon curd is an intensely unhealthy type of topping and spread that should only be eaten rarely, if that.

  9. Ooh I love lemon curd! Your recipe sounds super easy ... I found a very good one on the 'Love food, Hate waste' website, for microwave lemon curd! As far as I remember it made just one jar, but really hit the spot if you were craving curd!

    I went to Leeds last week to visit my son and had a really lovely time ... what a lovely city you live in!

  16. omg, your lemon curd looks delish, it sccrambled the last time i attempted it, makes me want to try again tho, my daughter would be over the moon if i could crack making lemon curd its one of her fave things, she would have it every day for breakfast on toast if she could . x ps. fab photos .

  19. It's one of those things that is sooo easy, but keep it to yourself, for maximum "ooh aren't you a clever old stick" impact. I have loads of gooseberries ripening, enough for some curd. I may well try it out, although it probably isn't as versitile nd lemon or orange.

    Lovely photos. I can never capture food on camera. You are very good at it. Do you use a specific place? Is it all about the light?

    1. Hello, and thank you! I just try to make sure I have lots of natural light, but not direct sunlight. My kitchen is small and a bit gloomy but I have one little bit of worktop under the window and that's where I photograph everything. I usually put things on top of a tea towel, partly for fun, and partly to hide our horrid "fake granite" worktops. x

  21. Mmm, I LOVE lemon curd. Anything lemony in fact. And the gooseberry curd idea is interesting - I have two huge gooseberry bushes at the allotment, so I might give it a try.

    I wonder how long does it keep, and does it have to be kept in the fridge even when unopened?

    1. I'd store it in the fridge and eat within two weeks. I reckon an opened jar would be ok for a week or so in the fridge. Hope that helps! x

  24. Now we're all craving lemon curd! As for tasty alternatives, I'd second passionfruit curd (lovely on scones, Nigella has a recipe) and also lime curd (I love limes) for another citrus kick.

  28. I love lemon curd - I haven't made it in ages, I'll have to get some jars out! I made some passionfruit curd last year - very different, but it tasted amazing. I like my lemon curd tangy - always increase the amount of lemon zest just to make sure!

  36. Your lemon curd looks lovely- I make my own too, but never have jars to out it in , so I just put it in old lidded yogurt pots and keep it in the fridge- I never really know how long it keeps, as I eat it on everything, way too quickly:)

  37. Lemon curd has to be one of my most favourite things ever and apple curd is good too, it just needs a smidge of lemon to tart it up, so maybe a smidge of apple would take the edge off lemon curd?
